Richard Geoffroy, Chef de Cave at Dom Pérignon Champagne and current founder and creator of IWA 5, pursues the dream of a great Japanese sake with Assemblage. IWA has the ambitous goal to be deeply rooted in the traditions of Japan and at the same time reach far beyond the Japanese borders with its extraordinary harmony in taste.
The number five stands for balance, harmony, unity and essence and for IWA symbolizes assemblage - the art of selecting and combining different ingredients.
Richard achieves an extraordinary balance and complexity in taste through an assemblage of different brewing processes. He uses three different types of rice (Yamada Nishiki, Omachi, and Gohyakumangoku) and five different strains of yeast, blends sake with different degrees of rice polishing to achieve ideal gravity and balance, and uses sake made using the traditional Kimoto method to add depth and character.
In this Assemblage 3, Richard creates intense, pure and sophisticated aromas. The first aromas are bright, vegetal, more floral than fruity. White pepper - the aromatic signature of IWA - is clearly present. The refreshing acidity makes the sake smooth and light, with a long, lingering finish. Elegant, complex and balanced.
Aging: IWA 5 has the ability to be stored at low temperatures for many years.

IWA was founded in 2021 by Richard Geoffroy, chef de cave for Dom Pérignon Champagne for 28 years, together with designer Marc Newson, architect Kengo Kuma, and Ryuichiro Masuda, CEO of Masuizumi Brewery. Designed by architect Kengo Kuma, the contemporary IWA Brewery was built in Shiraiwa (Toyama), surrounded by mountains, sea and rice fields.
