This highly elegant Junmai Daiginjo from Yamagata received the prestigious IWC Junmai Daiginjo Trophy in 2024. The Yuki Megami rice, specially developed for brewing Daiginjo sake, is carefully polished to 18%. This results in pure taste and rich sweetness of the rice. The mash is pressed using the time-consuming Fukuro-Tsuri method, in which the sake is collected drop by drop. The result is fruity aromas of watermelon, guava and floral elegance, a hint of spices and rice cake. Delicate and silky texture with pineapple and mango notes and a long and elegant finish.

Die Brauerei wurde 1597 in Yonezawa, Yamagata gegründet. Ursprünglich produzierte man Sake für den regionalen Feudalherrn Uesugi. Später während der Edo-Zeit erhielt die Brauerei eine Sondererlaubnis zur Sake-Produktion während der Reisknappheit.
