東光 Toko Schneekönigin

This Junmai Daiginjo is brewed from the Yuki Megami (Snow Queen) rice variety from Yamagata Prefecture (GI Yamagata certified). The rice is carefully polished to 45% and then slowly fermented at low temperatures, creating an elegant sweetness, a wonderful fruity aroma and a smooth and elegant texture. The taste is very delicate, with a mild sweetness and perfectly balanced acidity and a refreshing aftertaste. The aromas are floral, with an elegant fruitiness reminiscent of green apple and white peach.

Die Brauerei wurde 1597 in Yonezawa, Yamagata gegründet. Ursprünglich produzierte man Sake für den regionalen Feudalherrn Uesugi. Später während der Edo-Zeit erhielt die Brauerei eine Sondererlaubnis zur Sake-Produktion während der Reisknappheit.
