For this Junmai Ginjo, TOKO selects the regional Dewano Sato rice variety from Yamagata, which gives this sake a good structure and full-bodied rice flavor. Typical dishes from the snowy Yonezawa region contain high umami, so TOKO likes to brew umami-rich sake. Aromas of ripe apples and tropical fruits, anise, orange, and dark chocolate. As a Genshu (undiluted) sake, it leaves a full-bodied impression of fruity sweetness on the palate, reminiscent of ripe apples. The structure is delicate and elegant, with a clean, fresh, and long finish. It also works well as a cocktail base.

Die Brauerei wurde 1597 in Yonezawa, Yamagata gegründet. Ursprünglich produzierte man Sake für den regionalen Feudalherrn Uesugi. Später während der Edo-Zeit erhielt die Brauerei eine Sondererlaubnis zur Sake-Produktion während der Reisknappheit.
