This "Nama" (unpasteurized) Junmai Ginjo is brewed from the local Yume Ikken rice variety and using black koji, which produces citric acid. This gives the sake a uniquely fresh and vibrant flavor. The aromas are mild, milky, reminiscent of yogurt and vanilla pudding. On the palate, it presents a nice balance of sweetness and acidity, accompanied by a pronounced umami flavor. Fruity notes of green apples and pears and a light creaminess round out the profile. Excellent with light dishes like vegetable tempura.
