This Sparkling Sake is Tatsuriki Brewery's hymn to its special terroir in Hyogo Prefecture.Himeji Castle, a World Heritage Site and National Treasure located in Hyogo Prefecture, is one of the "100 Best Cherry Blossom Spots in Japan". Tatsuriki, in collaboration with Himeji Dokkyo University, has collected 242 strains of yeast that can be extracted from these famous cherry blossoms. Including 2 types that are suitable for brewing sake. Tatsuriki has selected the yeast that best suits Tatsuriki's taste. This cherry blossom yeast, Yamada Nishiki rice from the special A district of Hyogo Prefecture, koji mushroom harvested in Harima and underground water from the Ibo River. These are the ingredients that make up this sparkling sake with a fine foam and a slightly sweet taste.
