This unique "Margherita" sake was brewed with Takane Nishiki rice, basil and tomatoes locally grown in Kita Niigata City. Both tomatoes and basil are grown at Takagi Farm, which is certified by the Japanese prefectural government as an eco-farmer and is engaged in cultivation using less agricultural chemicals and chemical fertilizers. The wonderful ginjo aroma released by the sake yeast combined with the aroma of tomatoes and basil create a unique and elegant aroma that somewhat remembers that of wine or brandy. The flavor is a combination of delicious umami coming from rice and tomatoes and the acidity and bitterness of the tomatoes.

In 2021, Yosuke Tanaka founded this small brewery in the lagoon in the northern part of Niigata. Under the motto "exciting and diverse", this micro brewery produces small batches of different sake. Each batch is unique (only about 500 bottles) for which different types of rice and production methods are tried out. Only products that grow no further than 20 kilometers from the brewery are used. Yosuke Tanaka names his sake SHO-KU and hopes the sake produced in the lagoon will fly into the sky like the migratory birds that congregate in the region and bring smiles to the faces of people around the world. It is exciting to follow the development of the taste of the different batches of this brewery.
UENO GOURMET is the first dealer in Europe importin Yosuke Tanaka's handprint sake and will be presenting further batches in future.
