Richard Geoffroy, former cellar master of Dom Pérignon, once again creates the highest level of sake art and sensory refinement with Assemblage 5. He uses Yamada Nishiki, Omachi, and Gohyakumangoku rice and five different yeasts. The result is a complex, elegant interplay of aromas with flavors of pear, raspberry, and plum, complemented by floral notes of rose and jasmine. The palate reveals an exciting contrast of fruity elegance and gentle astringency. The silky opening leads to a dry minerality and a refined finish with lemon, white pepper, and licorice.
Aging: IWA 5 has the ability to age at low temperatures for many years.

IWA was founded in 2021 by Richard Geoffroy, chef de cave for Dom Pérignon Champagne for 28 years, together with designer Marc Newson, architect Kengo Kuma, and Ryuichiro Masuda, CEO of Masuizumi Brewery. Designed by architect Kengo Kuma, the contemporary IWA Brewery was built in Shiraiwa (Toyama), surrounded by mountains, sea and rice fields.
