Ponzu Set Ponzu Set

Ponzu is a citrus-based condiment used in Japanese cuisine. Ponzu is traditionally served as a dipping sauce with tataki, sashimi, nabemono and shabu-shabu.

Ponzu Sauce Recipe:

Per serving: 1 tbsp Mirin Mikawa Original

1 part Shimousa soy sauce

½ tbsp Kitomura Yuzu juice

Mix all ingredients well. Anyone who does not tolerate alcohol well in food should boil the Mirin before mixing until the alcohol has evaporated.

The ponzu is served with sashimi, sushi, vegetables, chicken and red meat such as wagyu tataki. Mixed with some vegetable oil, it becomes a refreshing salad dressing.

Soy Sauce Shimousa

The "Shimousa" soy sauce is the popular Koikuchi (Dark) type and is made only from Japanese ingredients with no additives. It is brewed in a traditional way in cedar barrels, some of which are over 150 years old, and matured for 1 year. The soy sauce has a clear reddish-brown color, aromas of delicate coniferous wood, orange peel and toasted notes, as well as a round and clear umami taste. All-rounder for cooking, dipping and marinating, e.g. for sashimi, sushi, cooked vegetables and noodle soup.

Mirin Mikawa Original

Mikawa Mirin Original is made with the selected Japanese ingredients and traditional method, making the best use of sweet rice and umami. Intense sweetness with a pronounced spicy umami taste.

Usage: for marinating, teriyaki sauce (1 mirin : 1 soy sauce), salad dressing.

Can also be enjoyed as a liqueur and with desserts.

Alcohol content: 14% vol.

100ml yuzu juice is pressed by hand from approx. 1kg yuzu fruits (8-10 pieces).
