To start the menu, we also delve into the world of Asian flavours in the drinks accompaniment. The concept of the first course is to pack maritime-saline and green flavours into a vegetarian composition, i.e. oysters and caviar – only without oysters and caviar. To go with it, I serve you Nanbu Bijin's “Southern Beauty”, a junmai from Iwate Prefecture. Nanbu Bijn uses the original sake rice “Gin Otome”, which here brings out aromas of green pineapple, anise, fennel herb and coconut. The sake is appealing and crisp in style. Its acidity builds nicely with the vinaigrette and supports the freshness of the dish. The palate is slightly creamy, mirroring the texture of the sour cream mousse and cucumber sorbet. With its aroma of anise & fennel, it goes very well with the sea herbs and adds a certain fruitiness to the interplay of green flavours. Enjoy the combination!
