A chilled rosé wine is often served with fish or seafood, and this sake convinced me that this is an exciting alternative. The short fried pulpo, the fruity tomato and the full-bodied sesame-wakame salad harmonise almost perfectly with the rosé sake. The kimchi, with its integrated spiciness in harmony, makes the dish an umami variety. The Jerusalem artichoke brings the earthy and – through sauteing – the fatty components to the dish. The floral as well as the fruity notes in the sake play an important role with the light acidity to round off this dish perfectly. The Caro Pink Junmai Sake presented itself best at 9°C in the Gabriel glass.
