Recommended Sake-Pairing Nanbu Bijin Southern Beauty
The dish is at once refined, bold, intense and intriguing. We need a special drink here, a so-called tokubetsu, which brings powerful, yet round and soft flavours like this nihonshu. The fact that the drink is a junmai, a pure drink, makes us feel more acidity, which reduces the fattiness of the lamb. The fruity aromas of the drink support the strong flavours of the fresh pine needles and colourful meadow flowers. The combination of Jerusalem artichoke and truffles in the puree reveals an umami dimension, ideal for this nihonshu. The nutty notes also go well with truffles and morels. At a serving temperature of 10-15°C we rather emphasise the freshness of the drink, while this can also be served at 35°C, making it softer and smoother. That's the beauty of a Gin Otome-rice food and wine pairing – two different options with one pairing. Extra tip: Serve the nihonshu in a white wine glass!
