The starting point is the firm Carabinero with its sweet and discreet Umami taste. The creamy bisque has a balance between sharpness, acidity and crustacean flavor. The lukewarm,al dente kimchi reflects a similar taste with different texture. To compensate the sharp and sour elements there is a soft rice and the subtle coriander cream. The intense fruitiness and the soft sweetness of the sake create a counterpart full of character, who both balances the spiciness and animates the fruit character of the sake at the same time. An enormously thrilling experience on the palate, which refreshes and demands for more. Both are equal partners. I would suggest a drinking temperature of 10-12°C and a champagne glass, to reduce the sensation of alcohol and highlight the fruity character of this sake.
