Breton Lobster, Avocado & Swiss Alpine Caviar is a dish with a mild texture and light flavours, due to the sweet lobster and avocado taste. The composition of the rich sauce perfectly complements the fine acidity of the Hatsumago Kimoto Tradition. The sake, with its delicate umami flavour & finish, is a symphony – consisting of the intensity of the Swiss Alpine caviar and the lobster. The flavours of the dish are in harmonious balance with the sake, without one overpowering the other. I would serve the sake cold (at about 10°C) in a Grassl Liberté Glass.
