The reason for this is that the city of Ninohe in Iwate Prefecture in Japan where this sake is produced is rich in nature and many healthy people of old age live there. Nanbu Bijin is dry and refreshing, so it goes well with rich dishes. The scallop and edamame are very flavourful and therefore harmonise well with the sake. The use of grape oil also means that digestibility and health are taken into account. .
