The sake enhances the sharpness of the wasabi in the cheese and minimises the saltiness of the umeboshi. The umami of the sake comes out even more elegantly and prolongs the already long finish indefinitely. The sake comes out very well, and can celebrate its floral notes, saltiness, minerality. All the ingredients blend into a harmony in which, like a rollercoaster ride, a different flavour always takes the upper hand. The whole thing ends with a delirious finale that says goodbye with sesame and umami. At 14 °C, the harmony is optimal. Kanpai!
