Recommended Sake-Pairing Dassai 45
I decided on the Dassai-45, because I was the first to be impressed by its fragrance intensity and the dish is also scented (Parmigiano and olive oil). As the second point, the 16% vol. And the juiciness harmonize with the juiciness of the Wagyu Carpaccio. Point 3: the light aromaticity as well as the middle consistency match the sake consistency. Mild and fruity with aroma reminding of muscat grapes. The taste with its mild acidity reminds of white wines. Light bodied with a fine finish.
