As a 23-year-old young chef, he leaves his home country of Japan and finds his feet in a first-class sushi restaurant in London. To refine his individual style of cooking, he moved to Germany. At “Basho-An” in Freiburg, he spent three years perfecting the traditional Kaiseki style before becoming head chef at “Yoshi by Nagaya” in Düsseldorf - one of just two Michelin-starred Japanese restaurants in Germany. In his restaurant “Masa”, he offers a successful mix of Japanese classics and modernity, which also reveals European influences.
Today, his fine 4-course menu is accompanied by wines from the Barth, Clemens Busch & Köhler-Ruprecht wineries and, of course, Japan's national drink: sake. Yoshiko Ueno-Müller, the absolute sake expert, presents 2 premium sakes, finely matched to the menu: URAKASUMI Zen (Junmai Ginjo) + AMABUKI Rhododendron (Junmai Daiginjo). Her company UENO GOURMET is the leading supplier of premium sake in Europe with companies in Germany, England and Switzerland.
Riesling brut VDP.SEKT from Weingut Barth will be served as an aperitif at the table, followed by Clemens Busch presenting 2021 Marienburg Fahrlay VDP.GG and 2019 Marienburg Falkenlay from his winery; Max Tutaß from Weingut Köhler-Ruprecht will present 2020 Saumagen Riesling Spätlese trocken + 2021 Chardonnay Kabinett trocken. For dessert, Mark Barth presents 2003 Hattenheim HASSEL Riesling Auslese VDP.GROSSE LAGE.
