Shichiken Spirit of Hakushu
For this shochu, SHICHIKEN distills sake lees, a by-product of the sake-making process. The resulting shochu is subsequently aged for three years in Suntory whisky barrels from the Hakushu distillery. The refreshing ginjo aromas from the sake lees achieve incredible depth and concentration through maturation, showing aromas of apple brandy, malt, butterscotch, and caramel apple. On the palate, this shochu is full-bodied and rich and bears clear tones of apricots. We recommend serving it on the rocks, with soda, or in cocktails. Since sake lees contain concentrated rice nutrients after distillation, they are used as feed for Wagyu beef in Yamanashi Prefecture. This provides financial relief for cattle farmers and further improves the quality of Wagyu beef.
