1st Advent – URAKASUMI “Zen” (Miyagi) 

An elegant classic that embodies calm and balance. Gentle fruit aromas, mild acidity, and delicate umami make it the perfect sake to begin the season. 

Perfect pairings:

Fresh sushi or sashimi with salmon, tuna, or scallops 
Grilled chicken with soy and ginger glaze 
 Steamed fish with citrus dashi

Category: Junmai Ginjo 

Rice: Toyo Nishiki, Yamada Nishiki (50% pol.)  

Style: Semi-dry, fruity & smooth 

Serving temperature: Chilled (10–15 °C) 

Alcohol: 15 % vol. 

A sake that brings balance – a quiet moment between festive days. 


2nd Advent – IKEKAME “Barrel” (Fukuoka) 

A true rarity: aged in new French oak and brewed with black Koji. Rich, layered, and elegant, with notes of vanilla, coconut, and floral accents. 

Perfect pairings: 

Roasted duck breast with orange glaze 
Entrecôte with grilled vegetables and miso butter 
Japanese donburi with braised eggplant and sesame 

Category: Junmai Daiginjo 

Rice: Yamada Nishiki (50% pol.)

Style: Aromatic & expressive, semi-dry

3rd Advent – KIKUSAKARI “Sunrise” (Ibaraki) 

A fascinating rosé sake made from rare red rice – fruity, lively, and visually stunning. With notes of berries, cranberry, and cooked cherry, it offers a red-wine-like depth. 

Perfect pairings: 

Classic French onion soup with cheese croutons 
Bouillabaisse or seafood stew 
Grilled pork belly with caramelized onions 
Crispy fried chicken with spicy sauce 

Category: Junmai / Rosé Sake 

Rice: Asamurasaki, Gohyakumangoku, Miyama Nishiki  (65% / 100% (Asamurasaki unpolished))

Style: Aromatic & fruity, semi-dry 

Serving temperature: Chilled (10–15 °C) 

Alcohol: 14 % vol.

4th Advent – FUKUJU “Awasaki Sparkling” (Hyogo) 

A gently sparkling sake with soft sweetness and natural cloudiness, reminiscent of Moscato d’Asti. Aromas of lychee, rose petals, and raspberry yogurt make it the ideal festive finale. 

Perfect pairings: 

Brillat-Savarin or soft cheese with fresh berries 
Pannacotta with raspberry coulis 
Caprese salad with ripe tomatoes and sea salt 
Grilled scampi with lemon and herbs 

Category: Junmai / Sparkling 

Rice: Sake Rice (70% pol.)

Style: Light & fresh, sweet
