SHIN-ON Grace of the forest

This dry craft gin takes our senses on an aromatic "forest walk" through the green forests of Shimane Prefecture. Shimane is a particularly green region with beautiful lush forests and rivers. For this craft gin, numerous botanicals from the forests of Shimane, where SHIN-ON is based, were carefully selected. For example Kuromoji (Lindera umbellata, type of the laurel family), juniper berries, hinoki (Japanese cypress), yuzu and cinnamon. Based on barley shochu, this craft gin surprises with its gentle aromas: fresh citrus notes, round and elegant cinnamon notes, on a complex floral and plant bouquet. The taste is warm, velvety, the yuzu citrus fruit is well present with slightly resinous accents.

Enjoy this special craft gin pure, on the rocks, with tonic water, or with lime juice.

Founded in 1899 in Masuda (Shimane Prefecture), this brewery produces high-quality sake, shochu, liqueurs and gin from lovingly selected local ingredients. In Masuda City, Shimane Prefecture, abandoned farmland is becoming increasingly common. The distillery is working to reclaim this land by growing yuzu, chestnuts, persimmons and sake rice.

Classification of Premium Sake

For high quality sake, rice is polished prior to processing with the goal of eliminating the bran and protein which encase the starch held at the center of the rice grain.
