Amabuki Strawberry Blossom is unique in two distinct ways: it is brewed with yeasts cultivated from wild Strawberry blossoms, and it is also unpasteurized, or what we call 'Nama-Sake.' This one-of-a-kind combination makes for a Junmai Ginjo with unparalleled freshness and juiciness. On the nose, this Sake develops an intense bouquet of wild strawberries and delicate almond blossoms. Subtle aromas of puffed rice and red gooseberry add exciting complexity. On the palate, the texture is robust but never burdensome, tempered by lively acidity and a refreshing umami character.
