Niida Shizenshu Kioke

NIIDA HONKE follows the principle of “Shizenshu” (“natural sake”): the rice is home-grown in organic quality, polished as little as possible (85%) and fermented spontaneously and often brewed using the Kimoto method. Shizenshu Kioke is brewed in traditional home-made kioke (wooden barrels) made from sugi cedar wood which comes from the family's own forest. These wooden barrels give the sake an unmistakable character: natural, lively, and complex. Aromas of citrus, yoghurt and fine cedar wood. On the palate, the sake is deep and complex with a fine sweetness and refreshing acidity.
