Kanekoh Kikichoko 2-shaku

Kikichoko is a white porcelain cup used for tasting. Concentric circles are drawn with blue zaffer. Sake professionals judge the clarity and colour of a sake with those circles, so called "Snake Eye". Transparent glaze is applied over the Snake Eye pattern before firing the cup. It prevents discoloration. It is an indispensable tool for sake brewing.

Classification of Premium Sake

For high quality sake, rice is polished prior to processing with the goal of eliminating the bran and protein which encase the starch held at the center of the rice grain.
