Sansho pepper has a unique aroma and flavour that is not hot or pungent like black or white pepper, but has slight lemony overtones and creates a tingly numbness in the mouth. For good sansho only the husks are used.

Kaneichi was founded in 1880 in a small village of Wakayama Prefecture. Sansho pepper has been growing wild in this areas since ancient times. The founder noticed its high value as an aromatic spice and grafted the best sansho tree as a parent tree. The saplings were distributed free of charge to local farmers. Today, Wakayama Prefecture became the largest producer of sansho in Japan. Since its foundation they have been offering the best quality Wakayama sansho.

Classification of Premium Sake

For high quality sake, rice is polished prior to processing with the goal of eliminating the bran and protein which encase the starch held at the center of the rice grain.
