Imayo Tsukasa Koi

This Junmai Daiginjo combines elegant bottle design with a complex flavor profile. Inspired by the gracefulness of koi, the bottle has won several international design awards and represents tranquility, purity, and mindful enjoyment. Aromatically, the sake displays notes of white nougat, almond, steamed rice, unripe banana, mango, and white sesame. Sweet accents reminiscent of almond mousse unfold on the palate, accompanied again by notes of steamed rice, a soft texture, and a subtle, slight bitterness.

The brewery was founded in 1767 in Niigata prefecture and brews Sake using the traditional way without adding any artificial alcohol and ingredients. Their Sake “Koi” got the iF Design award for bottle and box and the brewery is open for tours to learn about Sake and its history.

Classification of Premium Sake

For high quality sake, rice is polished prior to processing with the goal of eliminating the bran and protein which encase the starch held at the center of the rice grain.
