Biho (beautiful foam) is a sparkling Junmai Ginjo sake brewed using the traditional Kimoto method, in which lactic acid bacteria are produced in the sake mash, thus protecting it from contamination. The result is gentle lactic aromas of buttermilk and aromas of steamed rice. A dry and clear Sparkling Junmai Ginjo with a fine perlage, Biho demonstrates beautiful contrast between the delicate sweetness of the rice and the characteristic acidity from the traditional Kimoto method. Perfect as an aperitif or with fried dishes such as fish tempura. The beautiful bottle is perfect for celebrations.
