This unique Junmai Taru sake is produced in the forests of Yoshino (Nara Prefecture), famous for its fine cedar wood. Local Yamada Nishiki rice is fermented spontaneously in over 100-year-old cedarwood barrels (kioke) using the Yamahai method. Aromas of chocolate, raisins and puffed rice combine with fine, fresh cedar wood tones which are elegantly integrated without being domineering. The pronounced acidity and rich umami flavour harmonize perfectly with hearty dishes such as saltimbocca or mushroom risotto.
