Dewazakura Yukimegami

Dewazakura Yukimegami 48 is an elegant Junmai Daiginjo from Yamagata. Its regional Yukimegami rice was developed especially for premium sake and polished to 48%. This gives the sake a smooth, pure and transparent character. Delicate aromas of ripe pear and banana mingle with juicy fruit, gentle sweetness and subtle rice umami. The clean, pleasantly fresh finish lingers on the palate. Elegant yet versatile, it pairs beautifully with an entire meal while also being an excellent choice to enjoy on its own.

The brewery was founded 1892 in Yamagata. The use of local water, local rice and the brewing philosophy of their Toji (master brewer) are the basis for their great success. Their sake are winning numerous excellent awards in and outside Japan.

Classification of Premium Sake

For high quality sake, rice is polished prior to processing with the goal of eliminating the bran and protein which encase the starch held at the center of the rice grain.
