The DARUMA MASAMUNE brewery is a pioneer and specialist in aged sake. Their vintage sake is rich in sweetness, acidity and umami, and develops further depth of flavor through maturation. In its youth, the sake has a golden yellow color and aromas of lime honey and vanilla. With its complex acidity and sweetness, it is reminiscent of port wine, and thereby pairs perfectly with fruitcake, Christmas sandwiches, various cheeses, and, of course, goose liver, a particular pairing made more delicious by the sake’s rich umami.
