Tedorigawa Layered
TEDORIGAWA Layered is brewed from the Ishikawamon sake rice variety. It is a modern yamahai sake and, at the same time, a kijoshu, in which sake is used in place of water during production. This integrates delicate aromas into a complex, modern flavor profile showcasing delicate sweetness, lively citrus notes, and aromas of ripe honeydew melon. On the palate, refreshing acidity meets subtle umami. The fermentation process gives it a slightly effervescent mouthfeel. Fresh, juicy, and elegant—ideal on its own or as an accompaniment to light appetizers such as fish carpaccio, ceviche, or salads.
