DATE SEVEN - Episode VII - the Final. The tale of a collaboration of 7 Sake breweries from Miyagi prefecture over 7 years created in its final year a very smooth, elegant Junmai Daiginjo sake with wonderful ginjo aromas.
In this final year, the sake brewing parts were split up as follows:
- Lead Brewery - Katsuyama Shuzo (Katsuyama, Sensho Masamune)
The lead brewery is where the sake was brewed and the brewery that was responsible for the entire sake making process - the “Toji” for this product. - Rice polishing - Niizawa Jozoten (Hakurakusei,Atagonomatsu)
- Rice processing/washing and steaming - Kanbai Shuzo (Miyakanbai, Osaki)
- Koji making - Hagino Shuzo (Hagi no Tsuru, Hiwata)
- Shubo/Fermentation starter - Kawakei Shoten (Koganesawa, Tachibanaya)
- Moromi/Main Fermentation - Suminoe Shuzo (Suminoe, Tanikaze,Benkeimisaki)
- Pressing - Yamawa Shuzoten (Yamawa/Washigakuni)

Founded over 300 years ago during the middle of the Edo Period in Sendai in the prefecture Miyagi. Katsuyama pursues a great experience for customers with Japanese Sake for every dish. The Sake is brewed with water from the beautiful terroir of Japan and rice, a gift from the land, using world-class technology of parallel multiple fermentation from Japanese food culture
