What is Fukurotsuri method?

The Fukurotsuri method (袋吊り, literally "bag-hanging method") is a traditional and meticulous technique for extracting premium sake. This method involves collecting sake without mechanical pressure, resulting in an exceptionally pure and refined liquid.  

 Process of the Fukurotsuri Method:
1. Filling the Bags: The fermented sake mash (moromi) is placed into small cloth bags.  
2. Hanging the Bags: These bags are suspended from rods, allowing the sake to naturally drip out.  
3. Gentle Filtration: The sake flows out under its own weight, avoiding mechanical interference or oxidation.  

 Features and Advantages:
- Highest Quality: The resulting sake is extraordinarily pure, clear, and free of sediment.  
- Complex Aromas: This method preserves delicate flavor nuances and subtle aromas.  
- Limited Availability: Due to the time-consuming process and small yield, Fukurotsuri sake is often highly exclusive.  

 Usage: 
Fukurotsuri is typically used for the finest sake categories, such as Daiginjo or special vintage sakes, as it enhances delicate aromas and elegance.
